Instructions
  1. Preheat oven to 375 degrees. Spread pine nuts on a rimmed baking sheet.
  2. Toast in oven, shaking once, until golden and fragrant, about 10 minutes. Transfer to a plate to cool.
  3. With a vegetable peeler, peel 8 long pieces of zest from orange; cut lengthwise into very thin strips. Halve orange; squeeze 2 tablespoons juice into a medium bowl (reserve unused portion for another use). Add vinegar, onion, and salt; let stand 10 minutes. Add capers, olives, parsley, pine nuts, and zest to bowl.
  4. Season with pepper; toss thoroughly with oil.
  5. Serves six.

Instructions
  1. Grease pie plate or muffin tins with coconut oil.
  2. Beat eggs in a separate dish. Add salt and pepper. Set aside.
  3. Brown your ground beef. Flavor with Mexican Spice seasoning mix. (See note below for recipe.) Layer the meat, salsa, and spinach.
  4. Slowly pour eggs over the top.
  5. Top with black olives.
  6. Bake in a preheated 350 degree oven for 30 minutes (pie plate) or 20 minutes (muffin tins) or until firm in the middle.
  7. The casserole can be made the night before and baked the next morning.
