Instructions
  1. Preheat oven to 375 degrees.
  2. Place the oil, onion, garlic, potatoes, spinach, green bell pepper, and pepper into a hot skillet. Saute until the onions are translucent.
  3. Add the mixture to a large mixing bowl, add the sausage links and mix.
  4. In a medium bowl, whisk together the eggs and milk. Stir in the vegetable and sausage mixture.
  5. Pour the mixture into a 12-inch cast iron skillet. Bake for 20 minutes covered with aluminum foil, remove foil and bake for another 20 minutes.
  6. Serve with scallions and diced tomatoes.

Serve this over cauliflower rice, quinoa, or challenge friendly pasta (like quinoa pasta!) to keep it Diet Level friendly!

Instructions
  1. Season chicken with salt and black pepper and place in the slow cooker.
  2. Pour tomatoes over the chicken, top with onions and peppers, add oregano, bay leaf, salt and pepper, give it a quick stir and cover.
  3. Set crock pot to HIGH for 4 hours.
  4. For the last hour of cooking, remove lid and keep the crock pot on HIGH to help it thicken.

  1. Preheat oven to 350 degrees.
  2. Sauté onions and peppers in oil. Let cool.
  3. Whisk eggs in large bowl. Add cooked veggies and bacon, salt, and pepper.
  4. Mix well.
  5. Use butter to grease 12-cup muffin tin, making sure to grease around the edges.
  6. Fill each cup with egg mixture.
  7. Bake for 10-15 minutes.
Recipe Notes

Bacon can be replaced with cooked ground meat or sausage and different veggies. These keep well in the fridge and are good to take on the go.

Be sure you purchase nitrite/nitrate and sugar-free bacon. Pedersons Farms is a great brand and HEB in Boerne carries it. There are also other brands that have jumped on the bandwagon. There are even microwaveable brands that you can get with no additives and that are sugar-free!
