Instructions
  1. Preheat oven to 350 degrees.
  2. Melt fat in skillet.
  3. Mix all ingredients together well.
  4. Brown in oil about 5 minutes all over.
  5. Transfer to baking sheet and finish cooking in oven for 8-10 minutes.
  6. Serve over zoodles or spaghetti squash.

Depending upon the meat used, you could change spice to rosemary, sage, or thyme.

Chicken Zucchini Soup

Chicken Zucchini Soup

This recipe is super easy, doesn’t take too long and still retains that “comfort” food feeling that typically accompanies chicken noodle soup – but of course, Fueled for GOD uses “zoodles” instead of the processed noodles. Yeah–we don’t want those extra carbs and calories, so we swap them out for more nutrients from the zucchini. Now, if you are a little, “I’m so bored with zucchini zoodles,” you can always try turnips or carrots or even parsnips instead. You can even spice it up a bit with some extra red pepper flakes.

  1. Place a large soup pot over medium heat and add in the onions, celery, carrots, garlic and red pepper flakes. Cook for 3-5 minutes or until vegetables “sweat” and onions are translucent. Add in the thyme and oregano and cook for another minute, stirring frequently.
  2. Place chicken thighs and bay leaves in pot. Pour in the chicken broth and water. Cover and let come to a boil. Once boiling, lower to a steady simmer and cook for 30 minutes. After 30 minutes, remove the chicken and peel off the skin and discard. Then, shred the chicken off the bone and set aside, with any juices. Place the bones back into the soup pot and simmer for 10 more minutes, uncovered.
  3. While the bones simmer, slice the zucchinis halfway lengthwise.
  4. Using your food processor, spiralize your zucchinis (or purchase already spiralized zucchini from your grocer). Set aside.
  5. Remove the bones and bay leaves and discard. Add the reserved shredded chicken back to the pot along with the zucchini noodles. Cook for 5 minutes or until zucchini is al dente or cooked to your preference. Serve warm.

Sweet Potato Zoodles with Chicken and Tomato Basil Sauce

This is a great weekday, dinner recipe. It’s packed with fiber and protein and takes less than 30 minutes to get onto the dinner table! It can all be prepped in advance, as well!

The sweetness of the tomatoes brings out the inherent sweetness of the sweet potatoes, which all works deliciously with the savory chicken.

  1. Place a large skillet over medium-high heat and add in 1 tablespoon of the olive oil. While oil heats, season the chicken with salt, pepper, oregano and garlic powder. Once oil heats, add in the chicken. Cover and cook for 10 minutes or until chicken is cooked through and no longer pink on the inside.
  2. While chicken cooks, peel and then spiralize the sweet potato. Set aside. (If you don't have a spiralizer blade for your food processor, you can buy "zoodles" at your grocer.)
  3. Set the chicken aside on a plate and cover to keep warm. Then, carefully wipe down the skillet and add in the other tablespoon of olive oil. Then, add in the sweet potato zoodles, season with salt and pepper and cook, tossing frequently, until al dente, about 7 minutes.
  4. While sweet potato zoodles cook, place a small pot on medium heat and heat up the tomato basil sauce. Let simmer while sweet potato zoodles finish cooking.
  5. When sweet potato zoodles are done, divide onto two plates. Top the zoodles with tomato basil sauce and then chicken. Garnish with parsley.
