Banana Blueberry Hemp Seed Smoothie

If you’re in the midst of embracing your Diet Level 5, 40-Day Challenge and looking for something for breakfast that isn’t egg-related, but still wanting to fuel up on protein so you stay satisfied all morning long, then grab your blender and whip up this smoothie!

The protein comes from almonds and hemp seeds, and although this smoothie may not look super special or amazing, it tastes perfectly sweet and creamy and offers 15.6 grams of protein and 9.3 grams of fiber. Since it’s just five ingredients, it’s incredibly easy to make. If you don’t already have hemp seeds, you can find them at HEB, Whole Foods, or Trader Joe’s.

  1. Soak all 12 pitted dates in very warm water for at least 10 minutes to soften.
  2. In food processor or large bowl (if using immersion blender), combine the mashed sweet potato, coconut oil, 8 of the softened dates, and vanilla extract. Blend until smooth. Add egg, flours, salt, baking soda and spices and combine until a soft dough forms (it may be sticky). If using a food processor, scoop dough into a mixing bowl. Fold in chopped walnuts, additional 4 chopped dates and hemp seeds (optional).
  3. Place bowl with dough in refrigerator, covered, and chill for at least 20 minutes.
  4. Once dough has chilled, preheat oven to 350° and begin to scoop tablespoon-size balls of dough, evenly spaced, on parchment-lined baking sheet. Flatten each ball so that it is roughly 1⁄4 inch thick.
  5. Bake for 11-12 minutes.
  6. Serve warm or store in the refrigerator. May also freeze to enjoy later.

  1. Process pecans in food processor until ground.
  2. Add dates and process until mixture is sticky.
  3. Add hemp seeds and coconut. Process until blended.
  4. Roll into balls and refrigerate until firm, approximately one hour.

You can find quality Medjool dates at Costco and Trader Joe's. Also, HEB has this brand in the produce section: Bard Valley Natural Delights Medjool Dates.

As far as the Vanilla Paste, I use this brand from HEB only because it does not contain alcohol: Taylor & Colledge Organic Vanilla Bean Paste. You can find it in the spice isle.

Instructions
  1. Pulse almond flour, macadamias, and coconut flour in a food processor until well ground.
  2. Pulse in seeds, flaxmeal, and salt until almost fully ground (leave a little texture for crunch).
  3. Pulse in shortening, then 1/4 cup water; dough will form a ball in food processor.
  4. Roll out dough between 2 pieces of parchment paper to ¼ inch (or less, thinner makes a crispier cracker).
  5. Remove top piece of parchment paper.
  6. Cut into 2-inch squares.
  7. Bake at 300° for 20 to 25 minutes.
