  1. Preheat oven to 375 degrees.
  2. Line a baking sheet with parchment.
  3. On the pan, combine the broccoli, sweet potato, onion, garlic, cranberries, and walnuts. Drizzle with oil, add seasonings, salt and pepper and toss to coat. Spread evenly amongst the pan, cover with foil and bake for 12 minutes.
  4. After the 12 minute,s remove from oven, add chicken, toss and place back in oven to bake for another 8 minutes.
  5. Then again, remove from oven, toss once more and place back in oven without foil this time and bake for another 5 minutes or until chicken is cooked through and sweet potatoes are soft.

  1. Combine turkey (or other ground meat), diced apple, onion powder, spices in a mixing bowl and mix thoroughly with a large spoon or your hands.
  2. Using hands, form meat mixture into 12 small patties. (Thin is good because they will shrink and fatten up in the pan a bit.)
  3. Heat a skillet over medium heat. When the skillet is hot, add oil (about ½ tbsp. per batch of patties, depending on the size of your pan).
  4. Add the patties to the pan, being careful not to overcrowd them or it's difficult to flip them and they won't brown as well. Cook for approximately 3-4 minutes per side until browned and no longer pink in the center.
  5. Remove patties to a plate lined with a paper towel and repeat with remaining oil and turkey mixture.
Recipe Notes

Store in a covered container in the refrigerator for up to 5 days. May be frozen for longer storage. To cook from frozen, add to a small pan with few drops of water. Heat over medium-low heat covered with a lid for 5-8 minutes or until heated through.

  1. Preheat oven to 350 degrees. Lightly oil a 12-cup, regular size or 6-cup, jumbo muffin tin; set aside.
  2. Heat a skillet to medium-high heat and add about one tablespoon of olive oil. Sauté finely chopped onion, peppers, carrot, zucchini and garlic until soft (about 3-4 minutes). If you use a high-powered blender to chop, there is no need for this step. Your veggies will be finely chopped enough to cook and soften in the oven.
  3. Place ground turkey and beef in large mixing bowl and add the veggies and allow to cool a minute (if you had to sauté them. Then add all of the remaining ingredients, except for the tomato paste or sugar-free ketchup.
  4. Using your hands, combine the ingredients together until well incorporated.
  5. Evenly divide the meatloaf among the 12 or 6 cup muffin cups in the prepared tin.
  6. Bake approximately 30 minutes. Remove from oven and top with the tomato paste or sugar-free ketchup.
  7. Return mini-meatloaves to the oven and continue baking for another 15 minutes, until cooked through.

Time-Saving Tip: Make a double or triple batch and freeze them for quick and easy dinners. Just thaw in fridge overnight and reheat in oven or simply pop frozen muffins in the microwave to heat and eat!

Instructions
  1. Grease the sides and bottom of the slow cooker with olive oil; sprinkle minced garlic over it.
  2. Season chicken breasts with salt and pepper.
  3. Add chicken to the slow cooker and arrange it in one single layer.
  4. Pour vinegar over chicken.
  5. Top with sliced vegetables and Italian Seasoning.
  6. Cover and cook on HIGH for 3 to 4 hours, or on LOW for 5 to 6 hours.
  7. Remove cover and transfer chicken breasts to a cutting board; using two forks, shred the chicken.
  8. Stir the shredded chicken back into the crock pot.
  9. Taste for seasonings and adjust accordingly.
  10. Serve.
