Sweet Potato Pie Smoothie

Sweet Potato Pie Smoothie

This smoothie offers tons of filling fiber and vitamin A, which supports the immune system and helps prevent skin from aging. Due to their relatively low glycemic index rating of 50, sweet potatoes can also help you lose weight by preventing blood sugar spikes after you eat, which can also help cut down on sugar and carb cravings.

Perfect for your morning meal, the “sweet potato pie” smoothie is low in sugar (the only sweetness comes naturally from the sweet potato). It’s also a great option for people who don’t love bananas. With a balance of protein, high-fiber carbohydrates, and healthy fats, this smoothie should become part of your breakfast meal rotation.

Note: Bake or steam a sweet potato ahead of time, so you can make this smoothie in minutes.

Instructions
  1. Soak all 12 pitted dates in very warm water for at least 10 minutes to soften.
  2. In food processor or large bowl (if using immersion blender), combine the mashed sweet potato, coconut oil, 8 of the softened dates, and vanilla extract. Blend until smooth. Add egg, flours, salt, baking soda and spices and combine until a soft dough forms (it may be sticky). If using a food processor, scoop dough into a mixing bowl. Fold in chopped walnuts, additional 4 chopped dates and hemp seeds (optional).
  3. Place bowl with dough in refrigerator, covered, and chill for at least 20 minutes.
  4. Once dough has chilled, preheat oven to 350° and begin to scoop tablespoon-size balls of dough, evenly spaced, on parchment-lined baking sheet. Flatten each ball so that it is roughly 1⁄4 inch thick.
  5. Bake for 11-12 minutes.
  6. Serve warm or store in the refrigerator. May also freeze to enjoy later.

Instructions
  1. Preheat oven to 425℉. Line a large rimmed baking sheet with parchment paper.
  2. Wash sweet potatoes and pat dry. Using a knife or mandolin slicer, thinly slice the sweet potato (with peel intact) into rounds about ⅛th inch thick.
  3. Place sweet potatoes on baking sheet. Add green beans and red onions. Drizzle 1 ½ Tbsp. Tessemae’s Organic Lemon Garlic Dressing & Marinade over vegetables. Toss to coat.
  4. Spread vegetables in a thin layer, making a space for each of the salmon fillets. Nestle salmon fillets into the vegetables then drizzle them with the remaining ½ Tbsp. dressing.
  5. Arrange lemon slices over the top of each filet. Sprinkle salmon and vegetables with dill, sea salt and pepper.
  6. Place pan in preheated oven and bake for 20 minutes. After 20 minutes, check salmon for doneness. If it flakes easily with a fork and is no longer opaque then it’s done. Remove it to plate and loosely cover with a second plate or a lid. Return vegetables to over and continue cooking an additional 5-10 minutes or until sweet potatoes are tender.
  7. Remove pan from oven. Serve salmon and vegetables with additional lime wedges and sea salt and pepper, if desired.
Almond Chicken Soup

Almond Chicken Soup

Sweet potato and almond butter give this soup a creamy, decadent texture. Homemade almond butter is best, of course. You can easily make your own by placing your almonds in a food processor with just a little coconut oil to make a paste to add to this soup.

Instructions
  1. Heat 1 tablespoon of ghee or coconut oil in large stock pot. Brown stew meat (or meat of choice) on medium high heat for a few minutes and then remove from the pot. Set aside in a bowl.
  2. Sauté onion in the same pot the meat was in until it softens. Add your meat back to the pot. Add sweet potato, carrot and sea salt and sauté a few minutes. Pour in the whole can of coconut milk and 1 tablespoon of curry powder and stir until combined. Simmer on low heat with a lid for 10 minutes.
  3. Stir again, then add the broccoli and zucchini and simmer with a lid another 10 minutes. That’s it! Your curry is ready when all the veggies are soft and your kitchen smells amazing.
  4. Serve in small bowls with fresh cilantro and enjoy!
Recipe Notes

Note: This dish is even faster if you use chicken or shrimp instead of beef. The veggies in this dish will cook down, providing enough water so that you do not need to add extra liquid beyond a can of coconut milk. If your curry is too thick for your liking, you may add some water or broth to thin it up a bit.

Instructions
  1. Preheat the oven to 350°F, and use a brush to grease a 12-cup regular-sized muffin tin with one tablespoon of melted ghee or coconut oil. (Or skip this part and just line the tin with parchment muffin liners.)
  2. In a large bowl, mix together the tuna, scallions, and cilantro. Add the mashed sweet potato to the tuna mixture, and gently combine.
  3. Mix in the lemon zest, jalapeño, the remaining two tablespoons of ghee or oil, eggs, and red pepper flakes. Season with salt and pepper to taste.
  4. Mix everything together. (Using your hands is best because that way you can make sure that the fish chunks aren’t overly broken up.)
  5. Scoop a quarter cup of the mixture into each greased muffin tin cup and flatten with the back of a spoon.
  6. Bake the tuna cakes for 20-25 minutes or until an inserted toothpick comes out cleanly.
  7. Transfer the cakes to a wire rack to cool. TIP: The easiest way to get them out is to put the wire rack on top of the muffin tin then flip everything upside-down, and tap them gently on the counter.
  8. Squeeze some juice on the tuna cake before your serving.

Sweet Potato Zoodles with Chicken and Tomato Basil Sauce

This is a great weekday, dinner recipe. It’s packed with fiber and protein and takes less than 30 minutes to get onto the dinner table! It can all be prepped in advance, as well!

The sweetness of the tomatoes brings out the inherent sweetness of the sweet potatoes, which all works deliciously with the savory chicken.

Instructions
  1. Place a large skillet over medium-high heat and add in 1 tablespoon of the olive oil. While oil heats, season the chicken with salt, pepper, oregano and garlic powder. Once oil heats, add in the chicken. Cover and cook for 10 minutes or until chicken is cooked through and no longer pink on the inside.
  2. While chicken cooks, peel and then spiralize the sweet potato. Set aside. (If you don't have a spiralizer blade for your food processor, you can buy "zoodles" at your grocer.)
  3. Set the chicken aside on a plate and cover to keep warm. Then, carefully wipe down the skillet and add in the other tablespoon of olive oil. Then, add in the sweet potato zoodles, season with salt and pepper and cook, tossing frequently, until al dente, about 7 minutes.
  4. While sweet potato zoodles cook, place a small pot on medium heat and heat up the tomato basil sauce. Let simmer while sweet potato zoodles finish cooking.
  5. When sweet potato zoodles are done, divide onto two plates. Top the zoodles with tomato basil sauce and then chicken. Garnish with parsley.

Instructions
  1. Have all your ingredients ready to go before beginning. You can make this recipe all in one skillet, or, transfer to a baking dish when it's time to bake*
  2. Preheat your oven to 400 degrees and heat a medium skillet* over medium heat and add the coconut oil to the pan. Add the shredded (you can use a box grater to shred them) sweet potatoes to the pan and cook until they begin to soften and brown, then add the shredded apples, salt and spices.
  3. Continue to cook over low-med heat about 5 minutes, then add the whisked eggs and coconut milk to the skillet** and mix to combine. Stir in the raisins, spread the mixture out evenly in the skillet, then sprinkle chopped pecans over the top.
  4. Bake in the preheated oven for about 10 minutes, or until the eggs are set and beginning to brown.
Recipe Notes

While this requires shredding the potato and apples, it is easily done the night before. Then, just throw your ingredients together and bake in the morning! This is a great brunch recipe, too!!
