Instructions
  1. Preheat oven to 350 degrees.
  2. In Dutch Oven or large frying pan, melt extra virgin olive oil on medium high heat.
  3. Add the brisket and brown on both sides.
  4. Remove and reduce heat.
  5. Add onion and cook until soft.
  6. Add the garlic and cook 1 minute or so.
  7. Add thyme and enough water to cover.
  8. Increase heat and bring to a boil.
  9. Cover the pot and bake for 3 to 4 hours, turning each hour until brisket is tender.
  10. Transfer brisket to a bowl and slice thin or shred.
  11. Discard thyme.
  12. Put cooking liquid into blender with onions and garlic and blend completely.
  13. Put sauce back in pan and simmer 5 minutes.
  14. Serve brisket with warmed sauce.
Recipe Notes

You can also do this in a slow cooker. Brown the brisket. Then add all ingredients to slow cooker. Cover and cook on low for 8-9 hours. Brown the brisket sauce as above. You could also add veggies--potatoes, carrots, or butternut squash when cooking to make a complete meal!
