Instructions
  1. Preheat oven to 350 degrees.
  2. Sauté onions and peppers in oil. Let cool.
  3. Whisk eggs in large bowl. Add cooked veggies and bacon, salt, and pepper.
  4. Mix well.
  5. Use butter to grease 12-cup muffin tin, making sure to grease around the edges.
  6. Fill each cup with egg mixture.
  7. Bake for 10-15 minutes.
Recipe Notes

Bacon can be replaced with cooked ground meat or sausage and different veggies. These keep well in the fridge and are good to take on the go.

Be sure you purchase nitrite/nitrate and sugar-free bacon. Pedersons Farms is a great brand and HEB in Boerne carries it. There are also other brands that have jumped on the bandwagon. There are even microwaveable brands that you can get with no additives and that are sugar-free!
