Instructions
  1. Preheat oven to 350 degrees.
  2. Sauté onions and peppers in oil. Let cool.
  3. Whisk eggs in large bowl. Add cooked veggies and bacon, salt, and pepper.
  4. Mix well.
  5. Use butter to grease 12-cup muffin tin, making sure to grease around the edges.
  6. Fill each cup with egg mixture.
  7. Bake for 10-15 minutes.
Recipe Notes

Bacon can be replaced with cooked ground meat or sausage and different veggies. These keep well in the fridge and are good to take on the go.
