I LOVE this recipe. Chicken strips WITH CRUST???  Whaaat?  AND, so good for you with all that fiber–flax seeds, chia seeds, cashews!  Can’t beat the “healthy” part of this recipe.

Instructions
  1. Place cashews in a blender until crumbly.
  2. Mix cashews, chia seeds, ground flax seeds, salt and pepper by hand and place in a shallow dish for "crumb" mixture.
  3. In another shallow dish, whisk 2 eggs with 1 tablespoon water.
  4. Take chicken strips (dried with a paper towel), dip in egg mixture, then dip in crumb mixture.
  5. Fry in sauté pan with a small amount of oil over medium high heat until golden brown and no longer pink in the middle.
  6. Make sure to carefully turn chicken, so as not to accidentally remove breading.
Recipe Notes

You can also bake these in the oven at 350 degrees for 35-40 minutes. Be sure to coat the pan with olive oil so your strips don't stick to the pan.
