Coffee Creamer

One of the struggles we saw in the first or pilot group of Fueled for GOD was the lack of a really good, affordable coffee cream. Yes, there are some you can purchase and order. However, they are quite expensive and, if you are like me, I like “coffee with my cream,” if you know what I mean:)

So, I had my “mad food scientist,” as I lovingly refer to her (Mandy) come up with this recipe and I ABSOLUTELY LOVE IT! It’s so simple you are going to think it won’t work! BUT IT DOES!

It’s creamy. It dissolves perfectly in your coffee. It lasts in your fridge forever. It even freezes and thaws out beautifully!  So, give it a try!!

Instructions
  1. Take 2 cups of raw cashews and soak them overnight with just a pinch of salt mixed in.
  2. The next morning, rinse the cashews and place them in the blender with 2 1/2 cups of water.
  3. Blend until consistency is creamy. Keep adding water, a little at a time, until cream is to your liking, as far as consistency is concerned.
Recipe Notes

This makes a large Mason jar full. You can keep watering down the cream as you use it.
