Plantain Pizza Crust

I absolutely LOVE pizza AND I absolutely have FALLEN IN LOVE with plantains!!  Ever since I fried me up some plantains in coconut oil, I was hooked!  So, given the chance to combine my TWO LOVES–pizza AND plantains–well, YEAH!!! Who wouldn’t, right?

Choose some healthy toppings!!  Bonus here is that your pizza will be fiber-filled and oh-so-healthy!!!

Instructions
  1. Preheat oven to 375 degrees.
  2. Peel or cut skin off of plantain and cut into large chunks (thirds).
  3. Place the plantain in a food processor or blender, and add the spices, olive oil, and egg white.
  4. Blend until well combined--a thick, yet creamy texture.
  5. Spread the plantain batter evenly on a parchment-lined baking sheet, roughly ½" thick.
  6. Bake for 12-15 minutes until crust is set and able to transfer without breaking.
  7. Add pizza sauce and desired toppings, then bake an additional 10 minutes.
Recipe Notes

To create an extra-healthy pizza, top with mushrooms, olives, and spinach.
